Executive Chef

Dogfish is seeking an Off-Centered Executive Chef to lead the culinary stars at our distinctive seafood & craft cocktail experience, Chesapeake & Maine, located in beautiful coastal Rehoboth Beach, DE. At C&M, we source fresh, sustainable seafood exclusively from the Maine and Chesapeake Bay regions to create an off-centered take on coastal favorites. Reporting to the General Manager, you will be leading all Kitchen operations to include leading and growing the team, pleasing guest’s taste buds, ensuring quality, consistency and safety in our food program, and creating a kitchen environment where teaching and learning are paramount. The ideal candidate will be passionate about safety and sanitation and will lead the team toward high standards while bringing best practices to life. You must be sound operationally, to bring great focus toward a healthy and vibrant P&L with a nod to running great food costs, minimizing waste and being really efficient in all that we do. The Ex ecutive Chef will understand and cherish the Dogfish experience and aim to infuse off-centeredness into the menu with a nod to great cocktail and beer complements. You will have oversight of the culinary experience both inside Chesapeake & Maine as well as at certain external Dogfish events. As a leader of the Dogfish management team, you will be called upon to embrace and expand what we already do awesome and rethink and change what has room to improve. This role is not for the meek or mild; you must thrive in an environment of change and be energized by inspiring people. You’ll also play an active role in the communities in which we’re members, to include our Rehoboth Beach home, craft beer worlds and foodie enthusiast groups alike. You’ll be a part of it all!

What You Need to Land This Gig:
The successful candidate will be an experienced chef with a minimum of 8-10 years progressive back of house management experience. Restaurant experience gained from a high volume fine dining setting is strongly desired! You must be super resourceful within your four walls, to include being well-versed in basic equipment maintenance and kitchen layout and/or know the right industry contacts who can supplement your limitations in a pinch. At Dogfish we carefully select managers based on the three-legged stool of people leadership, technical excellence and fit within our incredible off-centered culture. We’re looking for a dynamic individual who rocks a passion for this industry, our amazing eats and off-centered spirits and ales and lives to bring this passion to life for others. Our restaurant is open seven days a week, year-round, for dinner and employs a seasonally fluctuating team of 60-100+ coworkers. We desire full availability.
